Pizza Night
Tuesday I reblogged this picture, and said I was going to try the recipe out on Friday. Well I did, and they were so incredibly delicious. I didn’t have any pepperoni available so I made some bacon to crumble on top. I also topped them with a little dash of red pepper flake. Needless to say after devouring 7 of them in under 20 minutes. I will be making these little tortilla pizza muffins again in the near future.
On a side note, since I was already cooking Bacon for my lil mini pizzas I also cooked up some Bacon Wrapped Chicken Fillets for a slow cook pasta meal I will be making tomorrow night. The downside of this sudden cooking frenzy is that my sink is now full to bursting with dishes and pots that need to be cleaned. I am not looking forward to that part.
Been prepping ingredients to make my meals for tonight and tomorrow, and now my entire house smells like Bacon. I wish it could smell like this all the time….

A lot of the things I cook require an “acquired taste”. None of my family thought my Carmel Chocolate Bacon Peanut Brittle was going to be any good until they tried it. Now they are hopelessly addicted to it, and I get nagged to make it again at every family gathering.
The same can be said for the Peanut Butter Sesame Soy Sauce reduction I make for when I cook Pot-stickers. One day maybe I’ll share my recipe for my infamous Peanut Butter Chicken Panini.
So as I mentioned earlier today, I decided to console my inability to get some Mozzarella Sticks due to my car being stuck in the ice, by making a Chicken Pancake sandwich for dinner. Needless to say it was incredibly delicious, and I will most definitely be making it again.
Sometimes Life is like swimming uphill on waves of rotten Bacon…….
